Luqillo Beach Sunrise Puerto Rico

I am sure it is no surprise to anyone that the sunrises over the beach were breathtaking. Again due to a wonderful bed, I was unable to sleep and up at sunrise. The beach was empty while I was taking these pictures. This is the last of the Puerto Rico pictures, I will find something else interesting to post soon.

Luquillo Beach Puerto Rico

Here are a couple of shots of the beach in front of our hotel. I really like how the water takes on a very unique texture during really long exposures.

Below is a panoramic showing the view of the town from the beach. There were a number of run down or abandoned houses... I am not sure the picture does it justice.

Here is a panoramic taken as a storm was rolling in. I am not sure the picture does it justice. It was amazing watching the dark grey storm clouds roll in from the right while the left side of your view still looks like prime beach weather.

The next leg of our photo tour of Puerto Rico took place on the Ruta Panoramica. This will be a two part post due to the number of breathtaking vistas along the route. We drove from Adjuntas to Barranquitos on Rt 143. While we wished we had more time to drive the entire route we had to get to our next hotel in Luquillo. I hope you enjoy these photos...

Casa Grande Puerto Rico

Here are a few pictures from my recent trip to Puerto Rico with the wifie. The first two nights we were at a nice mountain lodge tucked away in a little valley.

It was amazing to be up at sunrise (translation - a very poor beds) and watch the clouds roll into and out of the valley within minutes.

This was picture was going to look similar to the first picture, but while working in Photoshop to bring out some detail the rainbow appeared. Interesting huh?

I did mention the lodge was nice, but there was a lack of interesting activities. Our trusty guide book brought us to " Los Dos Bocas", a very dirty lake that is the destination of choice for aquatic activity. We left shortly after we arrived. Stay tuned for the remain 4 posts...

Pork Tenderloin Cutlets

Tonight I thought I would try something different, at some point I learned that one could take pork tenderloin, pound it thin, cook it to mimic veal. I thought I would try this with my extra pork tenderloin. I started by cutting the pork tenderloin into about two inch pieces, placed it between plastic wrap and pounded the meat into this slices about a quarter inch thick pieces.

I prefer to sandwich the meat to be pounded between plastic wrap, this serves three purposes. Firstly, your meat is protected from anything on the counter as well as you do not have raw pork on the counter. Secondly, as one pounds the pork thin every other surface in your kitchen is now safe. Thirdly, clean up is now a snap! The next step is to dredge the pork cutlets in a 1:3 mixture of ground flax seed and whole wheat flour. This little mixture should add a little bit whole grains to the meal.

Now we are ready to start cooking. Preheat your pan with a little bit of oil. Add the cutlets, flipping after a few minutes. Remove them from the hot pan, and let them sit on a paper towel. This kept the cutlets from becoming soggy.

The only thing left to do is to enjoy your dinner!

This is my first photography posting. I have heard and agree with the statement "Good photography requires zero explanation." I was on the Harvard Bridge, Massachusetts Ave between Boston and Cambridge for the sunrise several mornings before work. I was able to stitch together the following panoramic pictures. Enjoy !

Candied Bacon - WOO HOO Post 1

Welcome to my first post! Given the title of this blog, I assume it is only appropriate for the first post to about candied bacon. I am sure this is not the only reference to candied bacon on the internet, but here are my thoughts on the subject. CANDIED BACON ROCKS. In case you did not understand that the first time, CANDIED BACON ROCKS!!! For those of you who have no clue what I am talking about, candied bacon is the wonderful result of baking some sugar type substance on top of a salty meat possibly with some extra flavoring. You might be wondering my the description was so vague, it is simply because there are so many variations to the recipe. My standard concoction consists of bacon (pork or turkey), sugar, molasses, and a pinch of crushed red pepper. I hope you will learn from my experience and find your own variations that work. Here goes...

1) Preheat oven to 400 F

2) Cover a baking sheet with aluminum foil. This will make your clean up far, far easier. Ideally a single sheet of foil is best. Trust me, I have learned from experience, that hot sugar mixtures will find a way to stick to any exposed surface.

3) Lay out the bacon slices next to each other so the maximal surface area is available for the sugar.

4) Mix your sweetness and flavoring, in this case we will use sugar and cayenne pepper.

5) Brush a thin layer of molasses onto the bacon. Pile the mixture from step 4 onto your bacon slices. Don't worry about using too much, the excess flavoring will just melt off.

6) Place the bacon into the preheated oven and bake for about 20 min. The sugar will turn dark and bubble. If you see too many black spots you have overcooked it. Remove them with a spoon. This step brings up the finer points of accurate and precise oven temperatures in addition to cooking times vs determining when something is done cooking.

7) OK this one is very important: wait for the bacon to cool to the touch to eat it. I will not be placing silly lawyer type warnings on my posts, I expect you people to think before acting. If you comment about burning yourself on hot bacon that just came out of the oven I will have fun with you. Enjoy!!!

There are two people who deserve credit for this, a foodie friend Annie who introduced me to candied bacon. The other person is my wonderful wife who suggested the blog name, due to my love of sweet and salty tender meat. While I am sure you will love the candied bacon, my wife enjoys the candied bacon ice cream. She describes it as sweet and salty bombs in a sea of rich creaminess. I suggest you choose your favorite ice cream base and try ading your candied bacon.
